Blanc de Blanc

This single vineyard 2021 Jaine sparkling Blanc de Blanc was crafted from Conner Lee in the Columbia Valley AVA. The vineyard is fully sustainable and uses organic farming methods, whenever possible. The fruit was hand-harvested early in the morning of September 18th, 2021. Upon arriving in the winery, the lot was hand-sorted, whole-cluster pressed. The wine was fermented and aged for 3 months in stainless steel. Then the wine sat in bottle for 14 months until disgorged off of the lees with zero dosage. Bottling took place in late June of 2023 with only 248 cases produced.

Tasting Notes

Color: Medium yellow

Nose: Intense notes of baked apple, apricot, brioche, almond paste, lemon meringue, and oyster shell

Palate: citrus, fresh stone fruits, and mineral tones. Beautiful mousse, with persistent freshness and a kiss of sweetness.

Mouthfeel: Mid-bodied, with soft texture and remarkable acidity

Finish: Long finish, with hints of citrus, and a saline and mineral touch

Atypical descriptor: hints of Bread pudding and Chalk
